I maintain the website for the English actor Ralph Morse who appeared as an imperial stormtrooper in Episodes 5 and 6. At 5' 9" he was one of the shorter ones. Hope this helps.

I'd never heard the theory about Tatooine having a weaker gavitational pull, but its certainly intriguing. Especially with the fact of Jabba choosing it to live on. I do wonder, though, how the presence of Bantha and Desbacks factor into it. Can larger creatures not be present on planets with strong gravitational pulls?

I do realize that some people do shrink as they get older, but Obi Wan was only 57 years old at the time of Episode IV. The two suns of Tatooine probably had the effect of reducing the gravitational pull of the planet itself. The presence of large creatures, such as Bantha and Dewback indicate that Tatooine probably did not have a strong gravitational pull. The fact that Jabba the Hutt chose to inhabit this planet also reinforces the notion that Tatooine did not have an overly powerful gravitational pull, as a planet with high gravity would make life too uncomfortable for a Hutt.

So I can't buy the notion that Obi Wan experienced significant shrinkage during his time on Tatooine. His high midi-chlorian count would have contributed to his resistance to shrinkage. Although, I must admit that Obi Wan did look older than his 57 years of age, I believe this was only skin-deep and a result of Tatooine's harsh climate.

As people grow older, they start to shrink. And in episode 4, Obi wan always had a hard time getting up from a seating position which shows he had a back problem, hence he is always arching, therefore looks a lot shorter then in episode 2.
